The dual boiler is the most advanced heating system, and it can brew espresso and steam milk simultaneously. That’s important as the espresso came out smoother on Thermojet models. I also found the Thermojet has more stable water temperatures, as the heat transfer is very efficient on this thin substrate material. The newer design has a very fast 3-second start-up time. The difference between Breville’s two style is the Thermojet is much thinner metal. Piping runs through a heated metal block that draws in cold water and sends out hot water.
